Called the “pizza herb” by American soldiers returning from WWII, oregano is a staple of Italian, Greek and Mediterranean cuisine where it has been used for centuries. Oregano’s leaves are more flavorful when dried than fresh. Stronger, sharper and slightly more bitter than marjoram, it is the main ingredient in pizza sauce and tomato-based sauces and soups and often referred to as a substitute for basil. Evoke a taste of Greece with an oregano-lemon-olive oil sauce for salads and grilled items.
