Lemongrass Tea

One of the most common flavors in Thai and Vietnamese cooking, lemongrass could very well be the signature fragrance of these countries. A tall, thick woody sharp-bladed grass that grows in clumps, its citrusy aroma and flavor is actually concentrated in its lower cane-like stalks. A traditional herbal brew of lemongrass tea is often used as a remedy for a wide range of ailments from coughs, colds, to stomach troubles. Add it to marinades, stir-fries, spice rubs curry pastes, soups (Tom Yum anyone?), and stews.
