Kamut has been around for a long time, far longer than modern day wheat which means it's less likely to cause stomach upsets and bloating. These berries are used in much the same way as rice, but the cooking time is longer. If you are able to pre-soak the grains will take about an hour to become tender; if not they'll need simmering for about 2 hours. You'll need about double the amount of water to grain. Try mixing in crunchy vegetables and adding salad dressing for a cold kamut berry salad, or stir fry cooked berries with vegetables and seasoning.
