Caraway fruits, or so-called ‘seeds,’ have a pungent, anise-like aroma and are used to flavor cakes, breads (particularly rye bread), cheese, liquors, baked apples, and cabbage (particularly sauerkraut), and as a pickling spice. Probably one of the oldest spices cultivated and consumed in Europe, the use of the English term ‘caraway’ dates back to at least 1440 and is believed to be of Arabic origin. Used liberally in Indian, European, and Middle Eastern cuisine.
