This udon noodles are made from wheat variety “Nourin 61,” which is grown using “natural cultivation without fertilizers” without the use of pesticides or fertilizers. Nourin 61 is a variety that was widely cultivated nationwide after World War II, and is characterized by its strong wheat flavor and taste that becomes more pronounced the more you chew it.
