Couscous

Imagine tiny little balls of pasta that’s table ready in 5 minutes — that’s couscous. Essentially made from coarsely ground semolina, couscous served with a vegetable stew on top is considered “the national dish of North Africa.” Extremely versatile, couscous readily soaks up the flavors of the vegetables and meat it is paired with. It goes well with salads, and mixes nicely with herbs (coriander, basil, mint), and dried fruits. High in protein, couscous is the darling grain of every Mediterranean chef. Serve dry like pilaf or wet like risotto.
