Tamari has a deeper, clearer flavor than shoyu, it is wheat (and gluten) free and is used to add umami depth to sauces. Tamari is traditionally a by product from the production of miso and tends to have a slightly less salty flavour. This tamari is organic which guarantees the soybeans used to make the tamari are GMO free.
