Shiitake mushrooms are an essentail component in Japanese cooking and can be used to make a vegetarian dashi. Just add one shiitake and a strip of kombu to a jug of fresh water and leave in the fridge overnight. Next day you'll have a stock that makes beautiful miso soup. Shiitake is surprisingly high in iron and is known to support the immune system, making a bowl of miso soup with shiitake stock a great way to hold off winter colds.
