In ancient times, sage was used to ward off evil, snakebites, and increasing women’s fertility. One of the essential herbs in Britain along with parsley, rosemary and thyme (as in the well-known folk song “Scarborough Fair”), sage has a piney woodsy fragrance and a warm peppery and earthy flavor. It is used to season poultry, sausage, pork and stuffing and complements most vegetables. Sage makes a warming winter tea as well. Pairs well with strong flavors like garlic, thyme and pepper.
