The ancient relative of modern-day durum wheat, spelt is an heirloom grain that originated in the Near East over 8,000 years ago, later spread throughout Europe and became popular in Germany where it was farmed in the Middle Ages. High in fiber and a good source of iron and manganese, spelt is also highly water soluble which makes its vital nutrients easily digested and absorbed by our body. Spelt flour has a nutty flavor and can be used in recipes calling for wheat flour such as breads, pasta, cookies and other baked goods.
