A small bean which is quick to cook and good for sprouting. You can either partially sprout the bean before cooking, or sprout fully and eat raw in salads. Mung beans are a high source of manganese, potassium, magnesium, folate, copper, zinc and various B vitamins. They are high in fibre and protein and are one of the most digestible beans.
