A milder vegetarian curry roux ideal for children, or those who like the flavour of curry but not the heat. Boil vegetables (onions, carrots, broccoli, daikon, aubergine; whatever you have in your fridge) of choice in enough water to cover until they are tender. Turn off the heat. Mix the roux in some of water from the vegetables to make a paste before adding to the pan. Mix in well, then simmer the curry until it has thickened.
