Kanten, also known as agar agar, is a gelling agent derived from seaweed. This brand is made right here in Japan and is produced using traditional Japanese methods. Kanten sets slightly cloudy and is the key ingredient for making youkan. Roughly speaking you will need a heaped tablespoon of kanten flakes per 250ml of liquid, slightly more if you're making an acidic jelly using citrus fruit, and will produce quite a firm set. If you'd like a looser set try a combination of kanten and kuzu, combining around 1/2 tbsp of kuzu into the liquid before heating, then adding in 1/2 tbsp kanten.
