A larger, rounder, creamy white bean with a mild flavour, perfect for salads and stews, and a must for cassoulet. An excellent source of fiber and zinc. A good source of protein, thiamin B1, and magnesium. Soak overnight, rinse and discard the soaking water. Simmer the beans in fresh water for an hour and a half or until tender. Adding a strip of kombu to the water will help break down the enzymes which can make beans difficult to digest.
