Dao xiao mian (刀削面) is also known as knife-shaved, knife-cut, or pared noodles and are legendary in China. These noodles are a specialty of Shanxi province. An art form that takes years of practice to perfect, dao xiao mian result in a texture and feel that is unlike any other noodle you know. The secret is in the sun drying process which provide a rich flavor and consistency. Spinach, beetroot, bamboo charcoal and pumpkin give the noodles their natural colors. Great for noodle soups and stir-fried noodles. It also makes a gorgeous and appetizing base for stroganoff.
