Description
Next to saffron and vanilla, green cardamom is one of the most expensive spices by weight in the world. Each pod must be hand-picked when about three-fourth’s ripe, requiring more time and care compared to other spices that can be harvested by automated means. These pale green capsules contain many small pungent back seeds. Some describe cardamom’s taste as a combination of ginger, nutmeg, and cinnamon, with hints of mint and lemon. It is a major curry spice, adding complexity to biryani and curries, and often used to flavor hot wine punch, sweet milky rice pudding and egg custard. Cardamom lifts your chai tea to a whole new level.
