Description

These beans are very high in thiamin B1 with 45 percent daily value, which is essential to women who give birth. They are also a good source of healthy fiber, protein, iron, magnesium, and zinc. Soak overnight, rinse and discard the soaking water. Simmer the beans in fresh water for an hour or until tender. Adding a strip of kombu to the water will help break down the enzymes which can make beans difficult to digest.
